The dough is rising in Austin. Zpizza, a Southern California-based gourmet pizza chain, is moving into the Austin market, with the first of five stores opening by the end of this year. Franchisees Regina Brooks and her brother Erik Miller, both of Austin, signed the multi-unit franchise deal with Zpizza, which will have more than 50 location nationwide by the end of this year. "I was looking to franchise a concept that had an innovative niche," Brooks says. "Zpizza caught my attention because of its gourmet, health conscious twist on traditional pizza." Brooks' family owns the Crab-N Restaurant in Corpus Christi, and many regular customers are Austinites. "I wanted to be sure that whatever avenue I took in the food industry, I maintained the quality in which my family and our customers had become accustomed," Brooks says. Zpizza's menu offers 17 pizza styles as well as sandwiches, salads, calzones and a create-your-own pizza option with a selection of crusts, sauces, cheeses and toppings. "Zpizza's exceptional gourmet pizzas have been a hit on the east and west coasts," says Chris Bright, Zpizza president.
